Dayne and Jill Sherwood started Sherwood Estate in 1987 when they planted their first vines in West Melton on the Canterbury Plains, 10 minutes west of Christchurch.Since then Sherwood has grown significantly and expanded into other areas of New Zealand including Waipara, Marlborough and most recently Hawkes Bay. Currently extending to 130 acres, a further 120 acres have been added to the estate recently and will be producing in the next 2 to 3 years. After trialling many varieties Sherwood now specialises in Pinot Noir,Chardonnay and, of course, Sauvignon Blanc. In the vineyard, great care is taken over clonal selection and canopy management in order to produce the best fruit possible. All the wines are made in the estate winery in Waipara using a combination of traditional techniques and some of the most modern equipment available. Pinot Noir is given a short pre-fermentation maceration and is then fermented at controlled temperatures in open topped tanks using hand plunging followed by a period in oak. French oak barrels are also used for fermentation and maturation of Reserve Chardonnay but, as with all the wines, care is taken to maintain clarity of fruit. Sherwood Estate aims to produce subtle, elegant and complex wines that capitalize on the wonderful quality of fruit that New Zealand's vineyards can produce. |
