Winemaker Notes:
The grapes were whole-bunch pressed and the juice settled well before a very clean racking. Fermentation was with an Alsatian yeast strain, and enacted in the range 11-15°C. The must was arrested by cooling when it had about 10g/L of residual sugar. After fermentation the wine underwent
battonage, with the lees being stirred for some months. Then following a light fining with milk and C-Fine to ‘polish’ the wine at stabilisation, the wine was cross-flow filtered before bottling in July 2011.

Viticulture Notes:
The grapes were hand-harvested from a sloping, north-facing Redwood Valley vineyard on 13th April at 23.3°Brix. Soils in this vineyard are a light clay, and give the wine density and character.
