Winemaker Notes: The juice was pressed off the skins as quickly as possible and fermented very slowly until there was a perfect balance between the natural acidity and the residual sugar. Once stopped the wine was slowly lees stirred for a couple of months and then left to relax and mature in the tank until bottling.
Viticulture Notes: Helped by the warm 2011 season, the vines were in perfect condition and the fruit at harvest time were beautifully ripe and full of flavour. Minimal leaf plucking meant the grapes were exposed to the right amount of sunlight and as a result they ripened slowly which allowed the flavours to build up over time.
