Winemaker Notes:
Three clones of gew were hand harvested, destemmed and crushed before a 2 day skin contact soak to extract flavour from the skins as well as structural phenolics/tannin. Fermented just about to dryness by inoculated and indigenous yeast in barrel and tank before lees stirring for complexity. No fining. 9 months on lees.
