Wine Notes
Winemaker Notes:
Hand selected bunches of the 198 clone of Riesling grown at Greystone Vineyard were very gently pressed before settling to get clear juice for fermentation. A neutral yeast was used to ferment to dryness before a period of lees stirring and time on yeast lees. This wine is driven not only by Waipara’s mineral acidity but also by ripe phenolics, giving a wine of structure with the ability to age for 6+ years.
Viticulture Notes:
North-west facing rows on gentle sloping soils on Greystone Vineyard are where some of our Riesling vines grow, ripening slowly throughout the growing season. The soils on this part of the vineyard are predominantly clay. The fruit was hand- picked off spur-pruned vines at a density of 2500/ hectare.
