Winemaker Notes:
A cool fermentation lasting 30 days in stainless steel has given us an aromatic and textural Gewurztraminer while extended time on yeast lees has provided structure to body of the wine. Fining was not performed on this wine, allowing it to stay in natural balance, just how the fruit came in.
This wine is drinking well now and will continue to open up gracefully for the next 3-5 years.

Viticulture Notes:
The Greystone Gewurztraminer was planted on the Western end of a North-West facing block on gentle slopes that enjoy good heat accumulation, but also experience the cool nights of a Waipara Valley summer. Fruit thinning and then careful bunch selection at harvest time, provided us with only the ripest clusters. Density 2500 vines/Ha on VSP two cane trellis.
