Winemaker Notes:
The fruit was machine harvested in cool morning conditions and pressed with minimal skin contact. The clear juice was fermented at very low temperatures with selected yeast strains to retain the fruits inherent flavours. The wine was aged and stirred on yeast lees for 1-2 months to aid mouthfeel and texture.
Viticulture Notes:
The vines were pruned to 3-4 canes, with vertical shoot positioning. Balanced pruning, shoot thinning, tucking and trimming ensured a partially shaded canopy was maintained. The ripening season was characterised by a dry Christmas period and then a wet February. However, this was followed by a prefect late ripening period with clear, warm days and cool nights.
