Wine Notes
Winemaker Notes:
The fruit for this wine was hand harvested and fermented in stainless steel and concrete open topped fermenters. The destemmed fruit was fermented with both cultured and indigenous yeasts and macerated on skins at the completion of fermentation. The wine was then transferred to barrel for malolactic fermentation and subsequent ageing. After 20 months in barrel the wine was fined with egg whites and bottled in February 2008.
Viticulture Notes:
This wine is a blend of two Gimblett Gravels vineyard sites, the Cornerstone Vineyard and Omahu Gravels Vineyard. The vines are trained on a VSP trellis and intensively managed, employing shoot thinning, leaf plucking and bunch thinning to produce high quality fruit. Hand harvesting ensured only clean and ripe fruit was harvested.
