This is the first 100% Merlot we have made. Bright and cheerful, it abounds with flavours of black cherries and fresh raspberries, with added aromas of smoke and vanilla from oak ageing. It has a soft texture but retains enough tannin grip to reward mid-term cellaring and to make it enjoyable with a wide range of Mediterranean style food. Grapes were gently crushed and pumped to open topped, stainless steel vats. A Bordeaux strain of yeast was used to initiate fermentation, which was allowed to reach 33 degrees Celsius. During this time, plunging by hand took place every 4 hours to extract colour, flavour and tannin. At the completion of ferment, a 10-day extended maceration was used to stabilize tannin and colour components before pressing to barrels. Barrel ageing took place in a mixture of new and seasoned French and American fine grained, medium and heavy toasted oak from two coopers. The wine remained in oak for 10 months with three rackings, before being lightly fined with egg whites prior to bottling. |
