Each batch was crushed into tank presses where it remained in contact with skins for 12 hours to allow the raisined berries to leach their concentrated sugars into the must. After pressing, each batch was fermented slowly over two months in small stainless steell tanks and barrels until achieving the desired balance of sugar and acidity. The wine was then racked to old French oak barrels for an eighteen-month maturation on yeast lees prior to being bottled in February 2004. |
