This is a complex wine showing ripe fig & melon underlined by subtle French oak. In the background are citrus & white peach notes. A full-flavoured & elegant wine with a long, crisp finish. |

|
Clones 15, Mendoza & 95 were hand-harvested from our company vineyards at optimum ripeness. The fruit was whole bunch pressed & the juice settled for 24 hours before being racked into a mixture of new & seasoned French oak barrels for fermentation. The Clone 15 & Mendoza barrels were fermented using selected yeast strains, while the Clone 95 barrels were fermented using indigenous yeast strains. 50% of the wine underwent malo-lactic fermentation. All the wine was left to mature on lees for 9 months. The lees were stirred every 2 weeks to add texture and complexity. |
