Individual parcels were kept separate in the winery until blending. They were treated differently to greater reflect the unique characters from each site to create a representative blend from the Hawkes Bay region. Parcels were fermented on skins using both selected and natural yeast strains, pressed and transferred to a mix of tanks. A portion of juice was also seasoned in French and American oak barriques to complete the secondary malolactic fermentation and maturation. More
