|
A season giving both top quality and good quantities of the fickle Merlot grape has enabled us to produce our first reserve Merlot for three years. The Merlot was hand harvested from both the Gladstone Vineyard and the Waipipi Vineyard on 28th April. The grapes were managed in separate batches, and were left to cold soak for 48 hours prior to inoculating for primary fermentation, which took place in open fermenters. The must was inoculated for malolactic fermentation within 24 hours of the alcoholic fermentation starting, and then was hand plunged 3- 4 times daily, until the alcoholic fermentation was completed. Following fermentation, the wine was pressed and left to age in 1-3 year old barrels prior to racking. At blending 5% Cabernet Sauvignon was added to complement the structure of the wine. The wine was then filtered minimally and bottled. |
