Winemakers Notes
Traditional methode champenoise with a contemporary edge created by internationally renowned winemaker Alan McCorkindale using the classic variety Pinot Noir.

Clones of Pinot Noir have been imported from Champagne and planted in the gently sloping limestone-rich soils of his Waipara Valley vineyard. Traditional methods followed for production of this sparkling wine include hand harvesting, whole bunch pressing, fractionation of juice according to the latest CIVC recommendations, use of cuv-e fraction only, fermentation in oak etc. The wine underwent a malolactic fermentation in oak . This cuvee of 100% Pinot Noir has been lees aged for three years at disgorging.
