Tasting Notes
A brooding and complex nose of blackberry and earthy/ spicy notes blends with a touch of vanilla from the oak. The palate reveals solid fruit – fruit cake flavours that meld into a dense and seamless structure. A rich and rewarding wine with glossy, coating tannins and a lingering finish
Winemakers Notes
Select parcels of Cabernet Sauvignon (46%), Merlot (45%) and Cabernet Franc (9%) grapes were individually fermented in open vats and spent an extended time on skin post ferment to aid structural development. The wines were put into new and seasoned French oak and assessed for quality after several months. The blend was put together in September 2002. After a total of 16 months in oak barriques the wine was lightly fined and bottled.
Viticulture Notes
Rain early in the season produced a lush canopy that could take full advantage of the perfect weather during ripening, producing intensely flavoured fruit and ripe tannins.
Food Match
This wine is a brilliant match for red meats, game and pasta dishes. A perfect partner for casseroled lamb shanks or with Scotch fillet, roasted rare in the piece.
