Drylands Merlot 2006 |
| Produced By
Drylands Estate Winery |
| Winemakers Notes |
|
The grapes were harvested, destemmed and crushed directly to red wine fermenters, where the juice was inoculated with yeast chosen for their ability to enhance palate complexity. Maceration of the cap included ‘delestage’ and ‘pump overs’ every eight hours. The wine then underwent total malolactic fermentation, before being racked off gross yeast lees into a mixture of new and seasoned American and French oak barriques for nine months maturation. Prior to bottling the wine was cold stabilised, fined and sterile filtered. |
| Viticulture Notes |
|
The vines had been shoot thinned and bunch thinned at veraison to balance canopy and fruit loading, as well as allowing the maturing berries maximum exposure to sunlight. |

| A lovely nose of leather, spice and forest floor leads to good plum and cherry fruit flavours. The tannins are tight but opulent and the finish is lengthy. Excellent value. |
