|
Fermented and matured in barrel (20% new French oak for 2 months, 80% in 3-4 year old oak) with weekly lees stirring. Approximately 70% of the blend underwent full malolactic fermentation. The final blend was put together to create a classic lightly oaked chardonnay. |

|
2007 was an exceptional vintage in Gisborne with very clean ripe fruit. Mendoza Chardonnay was hand harvested from Andrew Nimmo’s vineyard in Bond Road, Ormond. The Brix at harvest was 22.0 with zero rotten berries. |
