Tasting Notes
The 2007 Rose has a pale salmon colour with beautiful summery flavours of strawberrry, raspberry and candy floss on the nose. The palate follows with a soft richness and a crsip finish. A great summer wine.
Winemakers Notes
The grapes were hand harvested at our Home block and machine harvested at our Dakins Road block. Merlot and Cabernet Franc grapes were used in the production of this wine. The grape skins were left in contact with the juice for 12 hours to extract flavours and colour prior to pressing the grapes. The juice was cold settled and then tank fermented. Fermentation was cool and steady. The wine then sat on yeast lees for about 3 months, prior to blending, fining, filtering and bottling.
