Colour: Salmon and gold
Nose: Ripe strawberry and pear, with notes of cream and freshly baked bread
Palate: An approach of cream and apple, followed with a lively effervescence and finishing with an invigorating acidity. A lovely creamy texture with a long lingering finish. |

Each parcel was harvested and pressed before cold settling for 48 hours. After after an extremely clean racking it was fermented cool at 12 C for about 30 days before starting a maturation period on lees. After the yeast had settled the blend was made and the wine was sent to bottle, at which point a dosage of sweet juice was added. From here the wine went through a second fermentation during which it became carbonated. The wine was then stored on its yeast lees for 40 months before being disgorged and resealed with a cork |

The Chardonnay and Pinot Noir grapes were selected from the Estate vineyard located around the Waipara Hills Winery in Canterbury. The 2002 vintage was ideal in many ways giving us a long warm January and February which promoted good flavour development in the fruit. |

| An intense golden colour, this is a serious fizz. It has a toasty, yeasty nose with rich, powerful flavours. It has a fine bead and is beautifully foamy in the mouth. The finish is strong , toasty and persistent. At its peak now. |
