Free-run juice was ‘bled off’ the red tank prior to fermentation. This is known as saignee. After settling, the
clear juice was cold fermented with selected yeasts to retain the aromatics.

Climate: The 2005 ripening season comprised a dry, warm summer followed by a cool Autumn.
Soils: Kaiti Clay Loam.
Vine Management: Sylvos trained vines were bunch thinned and leaf plucked, to ensure an open canopy with a balanced crop load.
