Wine Description
Our winemaker has chosen selected parcels of fruit from the new cooler climate vineyard at Matapiro 40 km inland from the coast. This Hawke’s Bay wine has concentration of flavour on the palate and vibrant aromas on nose.
Tasting Notes
Fermentation notes: The fruit was fermented at cool temperatures in stainless steel tanks. Selected yeast strains were used to maximise the different flavour profiles of the fruit.
Maturation notes: After fermentation the wine was taken off yeast lees to maintain the freshness in the wine and to maximise flavours and depth of palate. The wine was lightly fined and stabilised before bottling.
Other comments: The Saints Sauvignon Blanc style is to be up-front and aromatic, balancing crisp acidity with concentration of flavour.
Winemakers Notes
Colour: Pale, light straw.
Aromas: Has lifted aromas of blackcurrant, fresh cut grass and basil herb.
Palate: A mouth-filling palate of gooseberry and grapefruit. Natural acidity balances the concentration of flavour leaving the palate fresh and alive.
Viticulture Notes
2007 has been described as the best vintage for the last 30 years. The quality of grapes that were selected from the Matapiro and Patutahi vineyard were outstanding. The Matapiro vineyard is an exciting new development producing excellent aromatic grapes. The vineyard is located 40 km inland from the coast so enjoys unique climate compared to coastal sites. The cooler night temperature produces good aromatics and flavour while retaining good acidity in the grapes. The Patutahi grapes added a tropical richness to the palate. The grapes were machine-harvested at optimum intensity in late March 2007. Skin contact was given to some small parcels, with the balance being bag pressed.
Cellaring
This lively Sauvignon Blanc is crafted to be enjoyed while young, however it will continue to develop with cellaring over the next two years.

The distictive part of this wine is its excellent mouthfeel. The nose is one of restrained stonefruit aromas whilst the palate has good fruit ripeness and a lively, racy acidity. Overall a textured, harmonious wine.
