Tasting Notes
On the nose the wine is a complex array of bottled pears, dried figs and mead. The palate is elegant and well balanced with a soft, lush texture. The finish is clean and dry.
Winemakers Notes
The fruit was machine harvested in the cool early morning to retain fruit flavours and minimise phenolic accumulation. Once settled and racked, the juice was fermented in stainless steel tanks at cold temperatures and using selected yeast strains to retain the inherent fruit flavours.
Viticulture Notes
2007 was a standout year with warm, sunny conditions yielding fruit in optimum ripeness and condition. Vertical shoot trained vines were bunch thinned and leaf plucked to ensure an open canopy and balanced crop load.

A subtle floral and rose petal bouquet preludes a pleasant softly textured wine that has a tight acidity and an opulent finish. This wine will certainly improve for a little cellaring but is very good now.
