Tasting Notes
Made from fruit grown exclusively on the stony soils of our Annabrook vineyard, this Sauvignon has aromas of grapefruit, lime and yellow capsicum, combined with mineral and flinty flavours which reflect its stony origins. An elegant style, with good mouthfeel and texture due to some skin contact at pressing and extended lees contact after ferment.
Winemakers Notes
The philosophy behind this wine is to select fruit with the most pungent aromatics and best concentration, and to ferment it with sympathetic winemaking so that the fruit can truly express itself.

The fruit was harvested early in the morning when the fruit is coolest, and destemmed prior to gentle pressing at the winery. The pressing regime ensures the aromatic ‘freshness’ is protected in the juice, while also minimising bitter phenolics. In addition – 30% of the blend was given some skin contact by allowing the grapes to soak in the press for several hours before pressing. This gives the resulting wine more texture and palate ‘fatness’ to complement the overt aromatic components. After pressing the juice was cold settled for 3 days to achieve low solids prior to ferment.

To preserve fruit character, the fermentation was carried out in stainless steel and inoculated with an aromatic yeast. Ferment temperatures were deliberately kept low, ranging from 11 to 14°C. The fermentation continued steadily for 5 weeks, followed by several weeks of maturation sur lie with 100% of the blend being lees-stirred weekly to subtly enhance the textural component of the wine’s palate. All components were then racked off their gross lees, blended and lightly fined with C-fine to ‘polish’ the wine, then stabilised, filtered and bottled in one batch in July 2007.
Viticulture Notes
The 2007 season started off with a cool Spring causing a light fruit set; Summer was a late starter with lots of hot and sunny days in February, and almost no rain, leading to very dry conditions in the vineyards. Autumn continued very much in this vein, and provided a settled period in which to harvest. The combination of extra low crops, small berry sizing and a warm late Summer / early Autumn has meant fruit quality this year is outstanding – with impressive concentration of flavour.

All the grapes for the Bolitho SV 2007 Sauvignon Blanc were grown on the stony, alluvial soils of the Waimea Plains - in our Annabrook vineyard located next to the winery. Due to the particularly stony soil structure and the maritime influence, the vines ripen fruit slowly, resulting in highly concentrated grapes with distinctively pungent gooseberry and capsicum notes – key components in classical Sauvignon Blanc. The fruit was picked in the third week of April, with an average sugar level of 22.4
