Tasting Notes
Zesty and refreshing, this lovely example of Nelson Sauvignon has aromas of gooseberries, citrus and tropical fruit, combining with a flinty, mineral complexity. It is balanced by a full and textured palate that makes the wine more complete than some more straightforward Sauvignon. Enjoy with fine New Zealand seafood.
Winemakers Notes
The grapes were harvested at dawn and destemmed without any crushing, protecting the aromatic ‘freshness’ of the variety. After pressing the juice was cold settled for 3 days to achieve low solids prior to ferment. To achieve good aromatic definition, the fermentations were carried out in stainless steel; the musts were inoculated with a range of aromatic yeasts and fermentation temperatures were kept low.

For a textural component, some of the ferments underwent frequent bâtonnage, or lees-stirring – for over a month after the completion of ferment. By doing this, the result is a multi-dimensional wine, with pure varietal expression, but also with an underpinning of subtle texture.

After blending, the wine was lightly fined with C-fine – which subtly rounds off the wine. The wine was then stabilised and crossflow filtered before being bottled from July 2007.

Viticulture Notes
This season started off with a cold Spring with low levels of fruit set and summer was a late starter with cool windy weather around Christmas and New Year. By February we were in summer proper with lots of hot and sunny days, and almost no rain leading to very dry conditions in the vineyards. Autumn continued very much in this vein with a glorious Indian summer and our first fruit was harvested in late March. Due to lower crop levels and a late but warm season, this year’s fruit has excellent concentration and flavours.

All the grapes for the Waimea 2007 Sauvignon Blanc were grown on the stony, alluvial soils of the Waimea Plains. The fruit was picked at the end of March and in the first weeks of April, with an average sugar level of 22.3 °Brix.

This wine is definitely one for the cellar as we believe that it has great potential. Already the wine has decent tropical fruit aromas and flavours combined with balanced acidity and a clean, crisp finish although the best is yet to come.
