Cool fermented in stainless steel to preserve the fresh fruit characters and regularly stirred to encourage yeast autolysis characters. Citrus and stonefruit flavours are complemented by a creamy texture and a fresh flinty finish. |

This wine is dominated by lemon citrus characters with passionfruit and peach notes in the background. The palate is crisp and focused with the creamy yeast autolysis characters giving lovely palate texture and adding flavour complexity. This wine is strongly varietal and highlights the nature of Chardonnay unencumbered by oak. |

Fermentation was in 100% stainless steel tanks with neutral yeast and at low temperatures to retain and emphasise the natural fruit characters we produced in the vineyard. Post fermentation, the wine was lees stirred in tank three times weekly to add a creamy texture to the palate. In order to preserve the fruit flavours and the crisp fresh nature of the wine malolactic fermentation was not allowed to occur. |

Produced from Medoza clone Chardonnay on our Chaytors Road vineyard. Low yields producing intensely flavoured grapes that were harvested in perfect condition. |
| Cellaring |
|
This wine will drink wonderfully any time over the next one to two years. With age the wine will develop lovely toasty notes, however we recommend drinking whilst fresh and vibrant. |
