New 06 HB SP Merlot
Tasting Notes
Individual parcels were kept separate in the winery until blending. They were treated differently to greater reflect the unique characters from each site to create a representative blend from the Hawkes Bay region. Parcels were fermented on skins using both selected and natural yeast strains, pressed and transferred to a mix of tanks. A portion of juice was also seasoned in French and American oak barriques to complete the secondary malolactic fermentation and maturation.
Winemakers Notes
Bright, yet deep red in colour with faint purple hues. The nose is full of spice, red berry fruits and subtle oak. Firm gripping tannins on the palate add structure to this fruit driven wine which shows deep, rich cherry and plum fruit intertwined with spice and vanilla oak tones.
Viticulture Notes
The Hawkes Bay region is renowned for production of rich and fruity New Zealand merlot styles. The merlot fruit used to produce this wine came from various vineyards through the red producing region of the Hawkes Bay.

The 2006 growing season was unusually warm across New Zealand including the Hawkes Bay. This resulted in an accelerated ripening period and rich, ripe fruit flavours in the harvested grapes.

Cellaring
This wine can be consumed young, however will continue to develop for another three years.
Food Match
This wine is a perfect match with roast lamb and minted potatoes.
