Our Merlot offers lifted ripe plum and dark berry aromatics, seasoned by cedary oak characters. Bright fresh fruit and a mouth filling mid-palate are balanced by soft and fleshy tannins. This wine, though drinking well now will reward with further cellaring. |

The individual vineyards were hand harvested at optimum ripeness. The fruit was destemmed and crushed to open top fermenters. Hand plunged four times daily and four weeks on skins ensured good flavour, colour and tannin extraction. Post fermentation, the wine was pressed and then malolatic fermentation took place in tank prior to being run to French oak barriques for 16 months. After barrel maturation, the wine was racked to tank for blending and a light egg-white fine, prior to bottling. |

The fruit for this Hawkes Bay Merlot was sourced from three Gimblett Gravels vineyards. The free draining gravely soils and warm conditions of the Gimblett Gravels encourage low yields and de-vigourated vines, resulting in dense, richly flavoured wines. The 2005 growing season in Hawkes Bay experienced a warm spring followed by a hot early summer and a long dry autumn. Cool evening temperatures produced a later than average harvest, which resulted in excellent flavour ripeness and densely coloured berries. |
