New 05 Regional HB Merlot
Tasting Notes
The Hawkes Bay wine region is situated on the East Coat of New Zealand’s North Island. This region is recognized as our warmest region, and a producer of high quality red varietal wine styles. The 2005 vintage produced small crops of fruit with good flavour depth and defined varietal character. The vineyard chosen to produce this wine has stony gravels that assist the development of flavour profile in the fruit as it matures. The vines were trained on a vertical positioned trellis and underwent leaf removal in the fruit band at verasion. This exposes the fruit to sunlight, which assists ripening and development of colour and flavours.
Winemakers Notes
A deeply coloured generous merlot with chewy red currant and plum flavours. Hints of spice and blueberry flavours are also evident on the pallet. This finish is lengthy and focused with fine tannins.
Viticulture Notes
After crushing and destemming the fruit underwent a 50-hour period of cold maceration to further enhance the extraction of flavour, colour and tannins from the grape skins. The must was then inoculated with a selected yeast strain and fermented for eight days. Enclosed stainless steel tanks were used as fermenters and the cap submerged twice daily by pumping over to extract flavours and tannin. The wine was racked into seasoned oak barriques for 10 months to mature and undergo malo-lactic fermentation.
Cellaring
A pleasant wine to consumer now, however will continue to develop more mature characters to 2008.
Food Match
A robust wine that matches well with seared sirloin, corn cakes and anchovy butter and rocket salad.
