Wine Description
Pink Salmon with a rose hue. Rich aromatic rose petal with hints of raspberry and candyfloss. Medium body wine, uncomplicated, displaying intense fruity structure of cherries and floral notes with balanced acidity and a soft balanced finish.
Winemakers Notes
Estate Grown Vineyard in the Dartmoor Valley, 90 % Merlot, 10 % Malbec, from selected vines.

2004 was a good vintage, giving fantastic ripening conditions through a long cool autumn. Low cropping levels ensured optimum ripeness and flavour.

The grapes were harvested and taken to the winery. The fruit was cold soaked overnight and innoculated, fermentation was conducted cold for three days, and the fruit was gently pressed to retain fruit flavours where ferment continued for approximately 3 weeks. Just prior to completing fermentation the wine was racked off heavy yeast lees and left to settle on light lees. After 1 week on light lees the wine was blended, fined, stabilised and filtered prior to bottling.

No wood has been used in this wine.
Cellaring
This wine is ready for immediate consumption but will continue to develop and complex with bottle age.
