| Wine Description |
Ideal warm, dry autumn conditions enabled us to leave our Riesling grapes hanging on the vine until the approach of winter, when they were picked in perfect condition for making a superb late-harvest wine.
This dessert wine has a gorgeous array of aromas including wild passion fruit, apricot, lemon and honey. The flavours are intense, yet delicate, with a perfect balance of sweetness and acidity.
This wine is in honour of our youngest son, Hugo, who has always loved dessert wine.
The wine is sweet with a residual sugar of 130 g/L, pH of 3.29 and an alcohol level of 11.0%.

Following in the tradition of the 2002 release, the Highly raisined fruit with a significant percentage of noble rot, was picked in magnificent condition on the 18th May, whole bunch pressed for gentle extraction, with the juice run to tank and cooled for 24 hours, and then pumped back over the skins to help extract the special characters from the shrivelled grapes. This process was repeated three times until optimum flavour and aroma compounds were present in the juice. Fermentation followed and was maintained at a relatively low temperature so that the fruit characters were maintained.
Once fermentation was finished, the wine was racked off heavy lees and left on light lees to add creaminess to the texture and was then bottled in late November 2005.
