The grapes are from Waipara, grown on the stony terraces of McKenzies Road (50%)and the heavier clay loams of the Rayner vineyard (50%) The grapes were of exceptional quality and were hand selected in early May. |
| Tasting Notes |

The wine bouquet is showing the ripe mulberry of the Merlot fruit, highlighted with spice and toast from maturation in French oak barriques.The palate is classical with a first impression of ripe fruit flavours, a middle palate with hints of spice, dark chocolate, coffee and cedar wood, with a firm tannin finish. These flavours will change with bottle age to the classic rich cigar box bouquet combining to give a complex mouth filling finish. |

Fermentation involved hand plunging and cap temperatures of 30C. for maximumcolour and flavour extraction. After extended skin contact ( 2-4 weeks) and traditional basket pressing, the wine was then matured in barriques for 12 months. Each barrel was selected for the blend by experienced winemaker Kym Rayner. |
